Charred Vegetable Grill - celebrating our summer bounty!

So are the farmer’s markets open where you are? Our main one is open – but I have not been yet. Fortunately, our grocery store brings in a lot of local produce and there are like 7000 less people in the grocery store than at the Farmer’s Market. So we have great choices of peppers, summer squash, tomatoes, etc. And perfect for Charred Veggies Grill over Paella Rice!!!

A little bit ago I made some Paella Mixta and made way too much rice. But that is not a bad thing. Paella is all about rice – it’s a rice dish after all – the seafood and chicken etc are just the garnishes. The rice gets the love – the preparation infuses such a wonderful flavor. The short grain rice used in a paella holds up so well as leftovers – you can pile on the charred veggies and grilled meats and it’s a wonderful marriage of texture and tastes. (Speaking of marriage – in a few days it’ll be our 50th Wedding anniversary!!) And after you make the rice up, it keeps nicely in the frig for up to 2 weeks – so one day in the kitchen can supply the base for multiple grill recipes – which means you can be outside sipping something summery while the grill is working. It is very important that you use a short grained rice like Bomba, Calisparra or Arborio. So here is my recipe for Charred Vegetable Grill over “Leftover” Paella rice. Pulling the ingredients is so easy and a great summer meal. My recipe for Charred Vegetable with grilled Curried Chicken Thighs over “Leftover” Paella rice is just one way to use the rice. Use the best farmers market vegetable offerings – and whatever protein you might want to grill But the star of the recipe, besides the “Leftover” Paella rice are the charred red onions. Grilling the red onions opens up their sweetness and wonderfulness,. I highly recommend you add them to whatever vegetable mix you come up with. You could char up just the red onion and serve it with a steak and the “Leftover” Paella rice and have a marvelous meal! Like you worked all day to put on a great meal which of course is so great it requires a good bottle of wine……

So enjoy the concept of the Paella rice made for its “leftovers” with grilled charred vegetables. Yum, Yum…..and don’t forget the red onion.
